  4. It may act as a trigger in some genetically sensitive people

  7.     In a sense, scientists already know what causes juvenile-
  8. onset diabetes, a disease that afflicts about 1.5 million
  9. Americans. For some reason, the body's immune system attacks and
  10. destroys insulin-producing cells in the pancreas. Without
  11. insulin, the body is unable to process sugar into energy. Even
  12. with daily insulin shots, diabetics run a high risk of blindness,
  13. kidney failure and heart disease. But why does the immune system
  14. go on the attack?

  16.     A report in the New England Journal of Medicine says the
  17. culprit may be cow's milk, and the process a bizarre case of
  18. mistaken identity. Doctors at the Hospital for Sick Children in
  19. Toronto found that the diabetics had a much higher than normal
  20. level of antibodies to a protein in cow's milk called bovine
  21. serum albumin; their bodies have targeted the protein as an
  22. invader to be destroyed. By a terrible coincidence, a section
  23. of this milk protein is almost identical to a protein on the
  24. surface of insulin-producing cells. When these people are
  25. sensitized to milk, the theory goes, they are also sensitized
  26. to their own cells, leading to the cells' destruction.

  28.     The link has not been proved yet, and the researchers know
  29. that genetics also plays a crucial role. So too may other
  30. environmental factors, including chemicals. But if the cow's
  31. milk connection is established -- and it will take five to 10
  32. years of research -- eliminating milk from infants' diets might
  33. dramatically cut the incidence of this severest form of
  34. diabetes.
